It’s a risky dish to prepare ahead of time because 1) it doesn’t get cooked so bacteria continues to grow without being destroyed by heat, 2) the greens are typically kept moist and cool (perfect conditions for bacterial growth), 3) lettuce and similar products have enormous surface area between their leaves (more room for bacteria to grow and spread), 4) people don’t really clean salads, 5 people think salads last much longer than they actually do – like days instead of hours.
